Thank goodness my youngest daughter likes to bake with me. It makes for a very fun holiday tradition to get out the flour, baking soda, cocoa and sugar and come up with new recipes to indulge our love of creating and baking. This year my daughter created something she calls Chocolate Cake with a Healthy Holiday Twist. What makes it healthy? First we use Hodgson Mill Whole Wheat Flour. It's healthier than white processed flour. We also used oatmeal to provide some fiber and cinnamon which is known to bring out the flavor of chocolate and has healthy anti-oxidants.
We made this for Thanksgiving dessert to have a choice between that and the traditional pumpkin pie. Guess which one was gobbled up?
Here are our baking instructions for Chocolate Cake with a Healthy Holiday Twist
1 1/3 cups of Hodgson Mill Whole Wheat Flour
Add the dry to the wet, alternating with the chocolate milk. Stir in the oats and chocolate chips. Pour into cupcake tins (line and cook for about 15-20 minutes) or into a cake pan (grease and cook for about 20-25 minutes, depending on pan size). Enjoy!
